Grass-fed Highland beef has significantly less fat and lower cholesterol than commercial beef. We breed our own top quality steers from registered stock rather than buying cull cows, unwanted dairy cattle, or "feeder steers" purchased from an auction house. We do sometimes purchase steers from other small family farms in Michigan that raise their cattle the same way we do, when we do not have enough steers in our own herd to meet the demand for locally raised grass fed beef.

Special note to first time buyers:
Surprisingly, a beef quarter may not provide as many steaks and roasts as you might expect. About half of the packages will be lean ground steak. A complete beef steer will fit in a typical 21 cubic foot chest freezer with a bit of room at the top for other items. One beef quarter will take about a quarter of the freezer and leave a lot of room for other items. You may be disappointed the first time you buy a quarer of a steer and pick up just 3 trays of beef at Byron Center Meats. When you look at a big steer in the pasture, you expect a lot of beef. However, only about 40% of that big steer goes into the freezer. When you buy a quarter, you are getting only 10% of that big steer you see standing out in the field.
In accordance with USDA regulations, you are purchasing a 25% or 50% share of a live steer, but you never see the steer unless you want to. We take the steer to the butcher for you. Byron Center Meats in Byron Center, Michigan (south of
Your Investment:
Your investment is $3.75 per pound hanging weight in the cooler at Byron Center Meats, plus your portion of the cost of butchering and processing. Total cost for a quarter is usually about $700. If steers are smaller or larger, the cost will reflect the difference in size. Byron Center Meats calculates the cost - you pay them when you pick up the beef. We ask for a 25% deposit with your order. Byron Center Meats will deduct the deposit from your bill when you pick up the beef.
