This page provides processing data for a typical large Scottish Highland steer
Steers can be processed as a quarter or as a half, also called a side of beef. If you purchase a quarter from Wild Rose Meadows, you are really getting a split half, because you are getting half of all the cuts. You don't need to worry about whether you get the front half or the back half.

*Ground beef is “chubbed” = 1 lb packages, vacuum packed in clear square “bricks”that stack nicely in the freezer, don't leak on the kitchen counter, and retain the quality of the beef longer in the freezer.

Note: This steer is a little larger than most of our steers. We generally have one or two steers per year this size.
