Beef From A Large Steer

beefcutsThis page provides processing data for a typical large Scottish Highland steer

Steers can be processed as a quarter or as a half, also called a side of beef. If you purchase a quarter from Wild Rose Meadows, you are really getting a split half, because you are getting half of all the cuts. You don't need to worry about whether you get the front half or the back half.

  • Live weight = 1100 pounds
  • Hanging weight = 725 pounds hanging in the cooler at Byron Center Meats
  • Hanging weight per half = 362
  • Hanging weight per quarter = 181
  • Yield = 500 pounds total in the freezer
  • Yield per half = 250 pounds
  • Yield per quarter = 125 pounds
